Looking for a tasty and quick vegan rice recipe? The BOSH! Special Fried Cauli-Rice could either be a quick plant-based lunch idea or a veggie side dish for an Asian banquet! We experimented with adding a BOSH! twist to the classic, and made our very own plant-based special fried rice recipe.

Ingredients

For the rice

<item-todo-done>2 tbsp toasted sesame oil<item-todo-done><item-todo-done>1 onion - finely chopped<item-todo-done><item-todo-done>2 garlic cloves - minced<item-todo-done><item-todo-done>2 inches of ginger - finely chopped<item-todo-done><item-todo-done>2 carrots - peeled, chopped<item-todo-done><item-todo-done>½ block of firm tofu<item-todo-done><item-todo-done>1 tsp turmeric<item-todo-done><item-todo-done>120g mangetout<item-todo-done><item-todo-done>1 red bell pepper - chopped<item-todo-done><item-todo-done>3 spring onions - chopped<item-todo-done><item-todo-done>1 fresh chilli - finely chopped<item-todo-done><item-todo-done>120g sweetcorn<item-todo-done><item-todo-done>120g peas<item-todo-done><item-todo-done>60ml soy sauce<item-todo-done><item-todo-done>1 large cauliflower - or 2 small ones<item-todo-done>


To garnish

<item-todo-done> Sriracha<item-todo-done><item-todo-done> spring onion - chopped<item-todo-done>

Before you start

Powerful blender | Large saucepan

First, make the cauliflower rice

  • Break the cauliflower into flourettes, and pulse in a blender
  • Try not to put too much in the blender at once or it won't break up evenly and might get mushy

Then, cook the vegetables

  • In a large pan, heat the sesame oil and add the onions, garlic and ginger
  • Cook until soft, then add the carrots and cook a bit more
  • Crumble the tofu into the pan, and stir in the teaspoon of turmeric
  • This will give the tofu a beautiful golden colour
  • Then mix in the rest of the veggies and stir as you go

Combine the rice with the veggies and serve!

  • Add the blended cauliflower to the pan and stir into the veggies
  • Add the soy sauce and mix well
  • Serve and garnish with Sriracha and spring onions. BOSH!
