ultimate nut roast

What You’ll Need:

2 red onions
3 cloves garlic
Few sprigs rosemary & thyme
Salt & pepper (2 teaspoons of each)
500g (17oz) Mushrooms
400g Breadcrumbs (14oz)
3 tbsp soy sauce
500g (17oz) mixed nuts
400g (14oz) Chesnuts

How You Make It:

1. Put 3 slices of bread in the food processor & blend to breadcrumbs, put to one side
2. Put mixed nuts into food processor & blend to a crunchy powder, put to one side
3. Put the Mushrooms into food processor & blend till they’re minced in small pieces, put to one side
4. Cut the red onions & garlic into small pieces, put to one side
5. Fry the onions & garlic until they’re well softened.
6. Add the mushrooms, rosemary, thyme, salt, pepper & soy sauce & stir together until it’s all mixed together & the mushrooms are well sweated
7. Add the brown breadcrumbs & stir in
8. Add the blended nuts & stir in
9. You should have a really thick batter – stir in some vegetable stock if you need to add some moisture
10. Break the chestnuts up & add to the batter
11. Put the batter into a loaf tin lined with well oiled parchment paper, cover with tin foil & roast for 45 minutes at 200℃ (392℉)
13. Serve with roast vegetables & gravy
