
Black Bean and Sun-dried Tomato Dip
We make a big batch of this at the start of the week and it genuinely makes healthy snacking feel like zero effort. Black beans blitzed with sun-dried tomatoes, a hit of lemon, and a little chilli warmth create something rich, smoky, and a bit addictive in the best way. The sun-dried tomatoes do something really special here, giving the whole thing a deep, almost meaty flavour that you wouldn't expect from a 10-minute dip. Portion it into little containers with some crackers or crudités, and you've got five days of snacks sorted before you've even thought about it. Trust us on this one; once you've made it you'll wonder how you were snacking before.
Before You Start
- Food processor or blender
- Colander
- 5 small sealable containers
Ingredients
- 2 tbsp sun-dried tomato oil - from the jar
- 2 tbsp water
- 1 x 400g can of black beans
- 4 sun-dried tomatoes
- 1 Juice of 1 lemon
- ½ tsp chilli flakes
- Salt & pepper to taste
- 10g parsley leaves
- wholewheat crackers
- sliced veggies
Method
Make the dip
- Drain and rinse the black beans
- Juice the lemon
- Place the black beans, sun dried tomatoes, lemon juice, oil, water and chilli flakes in the blender and blitz into a textured paste
Taste and enjoy
- Taste, season to perfection and portion the dip into 5 small sealable containers
- Eat one portion every day as a snack with 2 of the whole wheat crackers or crudités
Tips & Variations
- Texture is everything: We always pulse rather than blitz continuously. Stop when it looks like a rough, chunky paste and taste it before you go any further.
- Spice it your way: If you like heat, add an extra pinch of chilli flakes or a small clove of garlic. If you're making it for kids, just leave the chilli out entirely and it still tastes brilliant.
- Serve with something good: We love this with warm pitta, toasted sourdough, or just a pile of crunchy veg. Carrots, cucumber, and celery all work really well here.
Why This Works
The trick is not over-blitzing it. You want a textured paste, not a smooth purée, so the black beans keep a little bit of body and the whole thing feels more satisfying and substantial. The sun-dried tomatoes bring so much concentrated flavour that you barely need to do anything else. Just a good squeeze of lemon and some chilli flakes, and you're done.
