Okay, this one genuinely gets us every time. We've been obsessed with recreating the Big Mac for ages and we're not exaggerating when we say this plant-based version is absolutely incredible. You've got that iconic layered bun, crispy burger, shredded lettuce, pickles, and that sauce. That sauce. It's creamy, tangy, and a little bit sweet, and it pulls the whole thing together in the best way. Make this tonight and you will not be disappointed.

Before You Start

  • Preheat oven to the temperature specified on your plant-based burger packet
  • Small mixing bowl

Ingredients

  • 8 meaty plant-based burgers
  • 8 x slices of plant-based cheese
  • 4 large burger rolls
  • 2 large gherkins
  • ½ baby gem lettuce
  • 1 white onion
  • 2 tsp yellow mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp paprika
  • 1 tsp white wine vinegar
  • 3 tbsp plant-based mayonnaise

Method

For the Big Mac sauce

  • Mix all the Big Mac sauce ingredients together in a small mixing bowl

Cook the burgers

  • Put the burgers in the oven – follow the instructions on the packet

Preparing the ingredients

  • Chop the onion into very small pieces, shred the lettuce and slice the gherkins
  • With a very sharp knife, carefully cut the burger buns into 3 pieces
  • Spread the Big Mac sauce onto the sliced bread rolls
  • Arrange the lettuce, onions & gherkins in the bread rolls

Add the cheese

  • Two minutes before the burger patties are set to come out of the oven, place the cheese slices on top of them

Time to build

  • Take the patties out of the oven
  • Build the burgers by adding a pattie in between each slice of bread, giving you 2 patties per burger

Tips & Variations

  • Get the sauce right first: We always make the Big Mac sauce ahead of the rest so the flavours have a chance to come together. Even 10 minutes in the fridge makes a difference.
  • Chop the onion really finely: We mean really finely. Big chunks of raw onion will overpower everything else. Tiny pieces give you that classic Big Mac texture without any harsh bite.
  • Don't rush the bun cutting: Using a sharp knife to cut the bun into three layers is what makes this look and feel like the real deal. Take your time with it and it's totally worth it.
