Creamy, Aromatic and Spicy. This Coconut, Basil and Broccoli Noodle Soup is the ultimate bowl of comfort, with a lovely kick of heat. It’s super quick to make, ridiculously simple, and packed with bold, warming flavours. We’ve topped it with crispy, charred broccoli and a drizzle of spicy peanut rayu for an extra boost of spice.

Ingredients

For the Noodles

<item-todo-done>2 tbsp vegetable oil<item-todo-done><item-todo-done>4 banana shallots<item-todo-done><item-todo-done>4 cloves of garlic<item-todo-done><item-todo-done>2 inch piece of ginger<item-todo-done><item-todo-done>70g basil<item-todo-done><item-todo-done>400g tin of coconut milk<item-todo-done><item-todo-done>750ml vegetable stock<item-todo-done><item-todo-done>1 lime<item-todo-done>


For the Broccoli

For the Peanut Rayu

<item-todo-done>100g unsalted roasted peanuts<item-todo-done><item-todo-done>2 tbsp chilli crisp<item-todo-done><item-todo-done>2 tbsp chilli oil<item-todo-done><item-todo-done>1 tbsp soy sauce<item-todo-done><item-todo-done> sesame seeds<item-todo-done>

Before you start

Frying pan | Medium saucepan with a lid | Blender

Prepare the Ingredients

  • Finely chop shallots
  • Peel and grate garlic and ginger
  • Juice half the lime, cutting the other half into wedges
  • Roughly chop peanuts
  • Blend coconut milk and basil until smooth

Make the Sauce

  • Heat the oil in a pan over medium-high heat
  • Add shallots and ginger, cooking for 6-7 minutes until golden
  • Add garlic and cook for 1 minute
  • Remove half of the shallot mixture to a small bowl and set aside
  • Add the stock to the saucepan and bring to a simmer, turn the heat to low and and keep warm

Make the Peanut Rayu

  • Add the chilli crisp, chilli oil, soy sauce  and peanuts to the reserved shallot mixture
  • Taste and adjust seasoning with salt, sugar, and lime juice

Cook the Broccoli

  • Heat 1 tbsp vegetable oil in a frying pan or wok over high heat
  • Add broccoli with a pinch of salt
  • Cook for 2-3 minutes until tender and slightly charred
  • Keep warm

Time to Serve

  • Cook noodles according to packet instructions and drain
  • Spoon the coconut basil mixture into the base of your bowls, pour in the boiling hot broth
  • Add in the cooked noodles
  • Top with charred broccoli
  • Drizzle generously with peanut rayu and sprinkle sesame seeds
  • Serve with lime wedges
