Jack's Wings and Fries

Vegan jack's wings and fries done properly, this is the one we keep coming back to on a Friday night. Jackfruit coated in jerk seasoning, smoked paprika, nooch, and panko breadcrumbs, then fried until golden and seriously crispy. Served alongside proper jerk-spiced fries, it's the kind of plate that disappears fast. We love this one because it hits every note you want from a takeaway night in, without the soggy delivery box. Before You Start

  • Preheat oven to 180°C
  • Large baking tray
  • Large saucepan
  • Deep-fry thermometer
  • 2 mixing bowls
  • Kitchen paper

Ingredients

  • 2 tbsp jerk seasoning or marinade
  • 1 tsp smoked paprika
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 x 400g can(s) of jackfruit
  • 100g strong bread flour
  • handful of fresh thyme
  • 50g panko breadcrumbs
  • tbsp vegetable oil for deep frying
  • 20g Nooch
  • 1 tbsp salt
  • 4 tbsp vegetable oil
  • 1 tbsp jerk seasoning
  • 4 large potatoes

Method

Prepare the wings

  • Drain and rinse the jackfruit thoroughly, then shred it by squishing it between your fingers and breaking it up into small, stringy strands
  • Place in a bowl and add the flour, jerk seasoning or marinade, nutritional yeast, herbs, paprika, soy sauce and olive oil and combine everything well
  • Tip the panko breadcrumbs into a separate bowl
  • Shape the jackfruit mixture into 8 'wings' and then dip them in the breadcrumbs, turning them until they are well coated

Make the fries

  • Cut the potatoes into 1cm fries and tip them into the large saucepan
  • Cover with water, add a pinch of salt and bring to the boil
  • Cook for 8-10 minutes, then drain and leave to steam dry
  • Spread the fries over the baking tray and drizzle with the oil, jerk seasoning and tablespoon of salt
  • Bake in the hot oven for 30 minutes, shaking the tray regularly to stop the fries sticking

Fry the wings

  • Pour the vegetable oil into the large saucepan so that it comes no more than two-thirds up the side of the pan
  • Heat the oil to 180°C, or until the oil sizzles around the edges when you dip in a wooden spoon
  • Lower the wings into the oil in batches and deep-fry for about 1-2 minutes, until dark golden brown
  • Remove to the tray lined with kitchen paper

Serve

  • Serve the wings with a pile of fries and dishes of dipping sauce

Tips & Variations

  • Drain the jackfruit well: Press it in a clean tea towel before coating. Less moisture means the batter sticks better and fries up crispier.
  • Double-dip for extra crunch: Coat the jackfruit, let it sit for a couple of minutes, then press it into the panko again before it goes in the oil.
  • Use BOSH! Nooch Nutritional Yeast: We use it in the breadcrumb coating here and it adds a cheesy, savoury kick that really lifts the whole thing.

Why This Works

Jackfruit has a brilliant fibrous texture that holds the coating and pulls apart like wings when you bite in. The nooch in the breadcrumb mix adds a savoury depth that makes the crust taste like it's got way more going on than it should. Getting the oil hot enough before you fry is the move that makes everything crunch properly, so don't rush that step.
