Super Green Smoothie

This is our go-to when we need a proper reset. We make this Super Green Smoothie after big weekends, before long days, or honestly just when we want to feel like we're doing something good for ourselves. It's packed with kale, spinach, avocado, apple, banana, and a little kick of ginger and chilli that makes it feel genuinely exciting rather than like a punishment. The mint and parsley give it this fresh, almost garden-y flavour that we absolutely love, and the oats and flax keep you full for ages. Blend one up tomorrow morning and you'll see exactly why we keep coming back to this one.

Before You Start

  • Blender
  • Glasses or cups for serving

Ingredients

  • 1 tbsp ground flax
  • 50g spinach
  • 50g kale
  • 200ml unsweetened plant-based milk
  • ½ avocado
  • 1 apple
  • 60g frozen berries
  • ½ Juice of 1 lemon
  • ½ banana
  • 50g rolled oats
  • 15g fresh mint
  • 1 celery stick
  • ¼ cucumber
  • 1cm fresh ginger
  • small handful ice

Method

Prepare the smoothie

  • Cut the apple into 4 pieces
  • Peel the ginger
  • Put the kale, spinach and plant-based milk into the blender and blitz to a liquid
  • Add the avocado, apple, berries, banana, oats, flax, mint, parsley, celery, cucumber, ginger, chilli flakes and ice to the blender and blitz into a smooth liquid

Time to serve

  • Pour half the smoothie into a glass and drink immediately
  • Pour the rest of the smoothie into a sealable cup and take it with you to work, or put in the fridge to drink the next day (shake to remix before you drink!)

Tips & Variations

  • Freeze your banana: We always keep a stash of peeled, frozen bananas in the freezer for this. It makes the smoothie thicker and colder without needing as much ice, which means the flavour stays more intense.
  • Go easy on the chilli at first: A small pinch goes a long way here. Ian once got a bit heavy-handed and it was quite the wake-up call. Start small and work up to your heat preference.
  • Make it a meal: If you want this to keep you going until lunch, Henry always throws in a big spoonful of nut butter. Almond or peanut both work brilliantly and add a lovely richness.

Why This Works

The trick is blending the leafy greens with the plant milk first before adding everything else. It sounds like a small thing but it means you get a properly smooth result with no weird chunks of kale hiding in there. The avocado is the other secret weapon here, it gives the whole thing this creamy, almost milkshake-like texture that makes it genuinely enjoyable to drink rather than something you're just powering through.
