For the Sauce

<item-todo-done>3 tbsp plant-based butter<item-todo-done><item-todo-done>1 medium onion<item-todo-done><item-todo-done>2 cloves of garlic<item-todo-done><item-todo-done>2 400g tins of butter beans<item-todo-done><item-todo-done>50g nutritional yeast<item-todo-done><item-todo-done>2 tbsp Dijon mustard<item-todo-done><item-todo-done>2 tbsp miso paste<item-todo-done><item-todo-done>1 tsp turmeric powder<item-todo-done><item-todo-done>½ tsp smoked paprika<item-todo-done><item-todo-done>200ml plant-based milk<item-todo-done><item-todo-done> salt and pepper to taste<item-todo-done><item-todo-done>500g macaroni pasta<item-todo-done>


For the Breadcrumbs

Before you start

Food processor | Large deep frying pan | Large pot

Prepare the ingredients

  • Peel and finely dice the onion
  • Peel and grate the garlic cloves

Make the breadcrumbs

  • Put the bread and nutritional yeast in the food processor and blitz into chunky bread crumbs
  • Warm the butter in the pan over medium high heat
  • Add the bread crumbs and little salt and pepper to the pan and stir until the bread crumbs are golden and crunchy
  • Transfer the breadcrumbs to a bowl and set to one side

Prepare the sauce

  • Warm the butter in the pan over medium heat
  • Add the onion and a pinch of salt to the pan and fry the onions for 5-6 minutes, stirring occasionally
  • Add the garlic to the pan and stir for 1 minute
  • Add the butter beans (with the liquid) into the pan, stir to combine and simmer for 2 minutes
  • Add the nutritional yeast, dijon mustard, miso paste, turmeric powder, smoked paprika, stir to combine and simmer for 1 minute
  • Pour in the plant based milk, stir to combine and simmer for 2 minutes
  • Take off the heat and leave to cool slightly
  • Transfer the contents of the pan into a blender and blend until completely smooth
  • Taste and season to perfection with salt and pepper
  • Transfer back to the pan

Prepare the pasta and finish the dish

  • Cook the pasta according to packet instructions in a large pan of salted boiling water
  • Drain the water, pour the pasta into the sauce and fold to cover and coat
  • Spoon into serving bowls, sprinkle over the bread crumbs, sprinkle over some finely chopped chives and serve immediately
